    8 Can Taco Soup

    This is a quick and easy recipe especially for the afternoon or evening you setup on cold and/or wet days

    8 Can Taco Soup
    1 (15 oz.) can black beans, drained and rinsed
    1 (15 oz.) can pinto beans, drained and rinsed
    1 (14.5 oz.) can petite diced tomatoes, drained
    1 (15.25 oz.) can sweet corn, drained
    1 (12.5 oz.) can white chicken breast, drained (makes for easy packing in the RV!)
    * You could use shredded rotisserie chicken meat if you want a meatier soup ....but I guess the name would have to be 7 can taco soup!)
    1 (10.75 oz.) can cream of chicken soup
    1 (10 oz.) can green enchilada sauce
    1 (14 oz.) can chicken broth
    1 packet taco seasoning

    Directions:

    Mix all ingredients together in a large pot (or a couple hours in the Crockpot)
    Heat until warm, stirring occasionally. ( this took me 15 minutes MAX on the stove )
    Serve with tortilla chips. Garnish with sour cream, cheese, cilantro, red onions etc.

    Sounds easy enough....one of my favorites is:

    2x4 soup

    2 cans Minestrone Progresso Soup
    2 cans Ranch Style beans
    2 cans chopped tomatoes (one or both can be Rotel if you like spice)
    2lbs ground beef browned...can be done at home and brought along.

    Dump into pot/slow cooker and heat.

    Doesn't get much easier!
