Is that a bad idea? Should we ditch the dry camping and try to find someplace with hookups?

If your water pressure is good and you do not have leaks then your pump may be out of adjustment. You need to figure out what pump you have and Google it or look in the manual and see if there are any adjustments. If you do make adjustments make sure you count the turns you make on the screws so you can put it back like it was if needed. You could also find the pump on Amazon and just replace it. Unless they put the pump in an inaccessible spot, replacement should be easy.

Yes you could turn the pump off when not in use, no problem.

If your pump slows down but doesn't shut off, it could be the pressure at the pump. I recently replaced my pump & this was my problem. Into the basement with a Philips screw driver. Tightened the three screws at the front of the pump. No problems after tightening those screws.
I was surprised something was fixed the first time I tackled a problem on this trailer.
