Easy - you need a switch and one additional battery cable. With two 12v batteries in parallel, you should have one battery feeding the positive line to the trailer, and the other feeding the negative. Most will say it is safer to install the cut-off on the negative side which is what I did. You simply disconnect the negative line, attach that to the switch. On that same side would go any other smaller lines that are currently on the negative terminal (I think there was one on mine). You then use the new cable to go from switch to the negative terminal on the battery. The switch is now a positive cut-off for the battery to the coach. Of course you do all this with the positive taken off, and the switch mounted where you want it in the belly. My install was about 10min once I had the battery boxes open. No more parasitic drain when parked for a while!

Two thoughts. One, the manufacturer’s installation instructions say to wire the positive side to the switch. Two, if you have two batteries, get a switch for two batteries so you can isolate one battery if you need to.

If I were wiring it on my boat, no question I would do exactly that as I only use one battery at a time to ensure I have a good second battery and I would typically alternate on days. With regards to an RV, if the 12V batteries in parallel are wired correctly with the positive leg on battery 1, and the negative leg on battery 2... then your batteries should be drawing down at exactly the same level and wouldn't want to isolate or prevent one from charging. As far as positive or negative - lots of varying answers on that issue with respect to an RV. But in the end - to each and their own and whatever works for you or meets your needs.
