Camping Texas
Does anyone know any "hidden" gems in Texas? We're based out of Houston but are interested in places towards the hill country or towards San Antonio? Towards Big Bend would be nice but too far for a 3-4 day trip. This may sound picky but the idea of an RV park just doesn't really peak our interest(don't want to be right up on another RV), we're more interested in actual camping spots like in state parks, etc.

This is an offroad (ATV, 4 wheeler, etc.) park but out in a nice setting near Marble Falls. You can get hookups or boondock - http://www.hiddenfallsadventurepark.com/camping. There is also a shooting range real close if you are into that.

Pedernales state park used to be good. Haven't been in Texas in years.

Several of the state parks in central Texas had significant flood damage a couple of years ago. Wherever you choose, make sure they've got everything back in order before you reserve.

We live in the Houston area and have found Huntsville State Park to be pretty good, 1 hour away. Also there are two COE parks near Belton Lake that are nice, 2.5 he away. Inks Lake State Park is nice but busy in prime season, 4 hr away and South Llano State Park in Junction is nice and very quiet, 6 hr away. Lake Livingston State Park is only 1.5 he away. We try to avoid commercial campgrounds. I would suggest you purchase a Texas State Parks annual pass, circa $70, free entrance fees and discounted campsite fees. Good luck.
