Freezing temps while traveling

Is there anything special we need to do if it gets below freezing while we are traveling? We have water tank heaters and obviously we will have the heat on inside, but I am concerned about the pipes freezing and breaking.

As @Aridon suggested, the response to your question depends a lot on the line (Transcend, Reflection, Solitude, Momentum) and model of your RV. In general, if you're talking about running the furnace while rolling down the road, the cold air at highway speeds will suck the energy right out of the trailer - and burn a LOT of propane. It will also be less effective heating the underbelly. Tanks, if empty, aren't a worry. Tanks, if full, won't freeze unless there are many hours exposure to very low temp. Best thing to do would be to blow the water lines with an air compressor before rolling and run the pump dry after draining the fresh water tank.
