How are these travel trailers running 2 a/c’s with only 30AMP service?

Power control system. It will shut off certain things to conserve energy for instances like when the 2nd AC starts and then return power once the start cycle is complete.

They are probably using easy start on the A/C's.

They are using the Coleman Mach’s that basically have the soft start. I can run my ac of 15amp outlet.

In our 2021 29G when the AC kicks on it only draws 11amps then drops to 10, sometimes 9. So both AC's are only drawing 20amps, and that is on a very hot day on high cool. The panel as mentioned above will "shed" as needed. If both AC's are running and you turn on the microwave for instance the system will shed the front AC until the draw drop, then a few minute after the AC kicks back on. I tested this pretty extensively as I was not convinced it would work.
