My brother uses the Anderson lightweight one that's only about 40lbs and easy to remove - gonna start there.
With the long bed, no worries about a sliding hitch and all that mess described above - yuck!

We have a 20015 GMC 3500 Denali srw lb. This truck rides better loaded or unloaded than most cars that we have rode in. According to the GMC parts list the Denali has different shocks than the SLE. With as much time as we knew we would be spending in the truck we wanted one that would be more enjoyable than just a truck.

I have an F350 SRW standard bed 6 ft 9 inches. I use the Andersen ultimate hitch, and have taken out my back window. Like you this is my only vehicle and the wife needs to drive it from time to time. I would go with the long bed. In Ford it gives you a bigger payload plus space for maneuvering in tight spots, turns greater than 70 degrees. But the payload is the biggest item. The difference in turn radius is significant surprisingly but I think the wife could adopt. I'm brave when she can't see or hear what I'm up to.

Again, big thank you to everyone for your time and advice - it's been very helpful. Once I realized there is form and function behind having the long bed, that calmed my worries about overall size and driveability.
I just took delivery this morning:
2021 Silverado 3500 LTZ Z71 Longbed +trailer & 5th wheel package, + safety package, +chrome running boards.

we went full time last year, just before the pandemic hit. Obviously it changed our mindset about buying the next house. I drive a Ford F-350 with the long bed. Going with a short bed with a 5th wheel setup just didn't make any sense to me. There are occasions when you will want to throw some extra gear in the front of the bed. The space limitation will be if you decide to put a box up front or a collapsable cover that is easily removable. I added the cover to the back, so that when moving about and just having the truck parked would allow me to protect the 5th wheel hitch that I keep installed year-round.
