I've got a little more data this morning. Seems maybe I'm worried about something that isn't really an issue.
Temps dropped into the mid 20s last night. I left my furnace thermostat set to 58 just to be safe. Out of curiosity, I went out early this morning, it was 26 degrees out, I popped open the pass through storage and shot my inferred thermometer around in a few places. The lowest temp I recorded was in the mid-50, around the cargo door on the opposite side of the RV; everywhere else in the passthrough was quite a bit warmer...up into the 70s in some places. With that, I opened the cover to the water heater and took a couple of measurements. It was quite warm in there. The temp varied in places, but the lowest reading was 55 degrees, with several places being several degrees warmer.
Since it was so warm, I figured my furnace had probably just turned off a short time before my excursion out into the cold, but nonetheless, this eased my mind quite a bit. Even with the thermostat set to 58, everything underneath was quite a bit warmer; including the area of the water heater that is only protected by that thin metal door. Being located right next to the furnace itself is probably helpful too. I went out again about 45 min. later and things had cooled a bit, but the lowest reading inside the water heater housing was still in the 50s.
Long story short, this too is probably one of those things I tend to overthink. I guess I'll find out soon enough how it performs while I'm using it, but he preliminary data seems quite promising.

Just to add some insights for others, and NOT to answer the question that was originally asked (which is a great question!).... but we have a new 337RLS with the Furrion Tankless Water Heater... and we have had it out once (this past week)... and I am on the prowl for how to either get it 'fixed' or how to replace it... as it sucks (IMHO).... of course, you have to let the water run for a rather long time to purge the cold water and then get warm/hot... but when you get the warm/hot water, it does NOT last long... so we had to take cold showers as wash our dishes in cold water... just not enough warm/hot water for any purpose...
I've stayed in small resort cabins that have LP Tankless Water Heaters and had endless warm/hot water... but the Furrion I have in the 337RLS does not perform well at all...
Looking for options, in case there is anyone else who has been through this issue with Furrion....
Thoughts?
