You don't have to take the original latch off.
Just install the item Rob recommended upside down. We have double insurance that nothing opens.

(Sorry for the dirty stainless, just got back from a short trip)

Our 2021 Solitude purchased in April has the freezer lock in the picture above & the refrigerator lock in the picture. So far with about 3000 miles we haven’t had the refrigerator doors open when traveling. Is it possible ours is an improved version of the lock? Is there a way to adjust the tension on the lock? Thanks

If you're talking about the upper (silver-colored) latch in post number 12, it will not keep the freezer drawer in place. Period. If you've not had problems, you've been lucky.

Rob. My apologies. I have the black latch (like the one on the bedroom closet) which was factory installed for the freezer. My question was about the silver latch that keeps the refrigerator doors closed. Does this lock fail & is it because the latch opens?

Yes - that latch will jiggle open and the refrigerator doors will come open. It's a poor application for that latch. The black Fridge Fixer shown in the photo above is the only reliable solution for the refrigerator doors unless you want to fabricate something yourself:
