Replace Suburban griddle with a 2-burner stove in outside kitchen?

Our 378 has the outside kitchen with a fridge and Suburban griddle on drawer slides. The griddle top was damaged during delivery from the factory back in June. We are still waiting on a replacement top even though I had planned on replacing the Suburban with out Blackstone 17" from the very beginning. Problem is that the Blackstone is about an 1" narrower and about 2 to 3" deeper than the Suburban. I could build out the opening to accommodate the Blackstone, but I'm not entirely convinced I like cooking on the Blackstone that close to the camper. We have a rollup aluminum table and a long quick-connect LP hose that works great for the Blackstone. I've been considering removing the Suburban and converting it to just a storage drawer (since there is no storage in the outside kitchen). Today, I started thinking about how nice it was on our Reflection 312 with full outside kitchen to be able to use the Blackstone and the 2 burner stovetop at the same time. That got me to thinking instead of a drawer, how about building a countertop on slides and replacing with a 2-burner drop-in cooktop like this: https://www.homedepot.com/p/Suburban...1AST/313685609. Anyone else do this mod? What do you think?

@Fsalmy my griddle was also damaged. It slams back and forth against the door while traveling and now the knob is bent, etc. I haven't measured the depth, but was thinking of installing a MORryde SP60-044 Sliding Battery Tray - 24.25" x 24.15" x 2.75", Black and setting a 22" Blackstone griddle into that for travel. My outside kitchen has wasted spaces (one being for the griddle), so thinking of taking the doors off and making it into one big fold down cutting board door and then installing a push button latch to help prevent it from banging against the compartment door.

I like to keep the griddle stand store it somewhere. Maybe one long drawer for the stand, and a drawer for the griddle.

All good ideas. I decided to scrap the grill/burners and custom built a drawer instead. I use the Blackstone a little farther away from the rig to prevent smoke and grease splatter.
