Set the AC on a low temp; lower than you'd like. Does it cool to that temp or not? If so: all is OK. If not check to be sure the ducts aren't pointing at the thermostat, check for icing inside the AC on the coils.
Yes, the air coming out is cool and is to set temp. We didn’t run it today as it was cool enough without AC. The ducts are not pointed at the thermostat. We’ll have to run it to see if it ices up. If that’s the issue, would the air coming out still be cool?

Correction….DH said one duct was pointed at the thermostat yesterday and he redirected it but that was after the last time the AC shut off.

The next time you run it I'd just lower the temp a lot and see if it reaches that temp before shutting off or if it "short cycles" again.

Thanks, Larry. We ran it for a little bit this afternoon and it did fine. It’s raining and cool here now so we’re enjoying the fresh air. For now all seems to be okay. Thank you and everyone else who jumped in to help. Really appreciate it!!
