A couple of things.....
First - make sure the vents aren't pointing at the thermostat. You'd be surprised how much moving just one can effect the thermostat.
Then set a really low temperature and see if the AC runs OK until that temp is reach on the thermostat. Maybe you are so close to the set temp when the AC cycles on that your room cools quickly and it then shuts off.
What room is it?
You can always remove the inside cover and the AirFlow and make sure the installation was done right and there is no leakage between the supply and return ducting inside the AC.
And there is the possibility that the unit is iced up. You can see that too once you get inside it.Larry KE4DMG

Well that worked great, now my problem is too too much airflow, my low cool is my high cool before airflow, and the ceiling vents can’t be adjusted or restricted. Wouldn’t mine cutting back the air flow a little

You might try cutting some foam strips and inserting into vent slots to reduce air flow. You could even spray paint foam to match color of vent so that they wouldn't be that noticeable .

You can find ceiling registers that are adjustable and can be shut off. First find out the size of the hole then shop a bit on line if you think you want to replace them.
In my rig some could be closed down and others couldn't (not sure why the mix), but I just moved a few around between positions to get the airflow the way I thought it worked best.Larry KE4DMG
