That depends on what type of camping you do. If you always camp with hookups, you'd probably be OK with the battery you have. But your frig (as you've seen) needs a lot of power. If you're going to be off-grid for any length of time, you'll need more battery power. There's a lot on this forum dealing with that, look around a bit and I'm sure you'll find plenty to consider.

Ok so lemme make sure I got this:
Upgrade battery in the future if we do more off grid and less city powered camping.
Fridge runs off the battery event when connected to city power.
Battery disconnect needs to be set to "on" where the key cannot be removed.
Solar charges battery which then allows the fridge to run.
Having the AC on at night has nothing to do with the fact that the fridge isn't working.

Wouldn't the 12V fridge run off the converter when connected to shore power? The fridge should run regardless of the SOC of the battery, at least that's the way I understand it should work. Solar shouldn't even enter into it if he's connected to shore power, as the converter will charge the battery. This all presupposes the Battery Disconnect Switch is turned to "ON".

Things are getting a little cross wobbled!
With the battery switch off the solar charges during the day and the fridge runs.
At night the batteries are not being charged and the fridge dies.
With the battery switch on the fridge runs day and night using a combination of solar and converter.

Day or night should have nothing to do with it, if you're connected to shore power, and the Battery Disconnect Switch is turned to "ON".
