We actually went the opposite direction - got rid of the dining chairs (hard to get in and out of and obstructed the views out of the windows) and replaced them with two storage ottomans. They are more comfortable to sit on and almost double our storage space for lighter, non-perishable food items. In answer to your question, people have done everything from removing dinettes to use the space for desks or kennels to building their own dinettes. I don't remember seeing anyone go from a dinette to chairs, though (I'm sure it's been done).
