I may get chewed up for saying this, but even with your current numbers, you are within a few hundred pounds of the payload. With that truck you will be fine with either trailer. My 31MB is a little smaller than the 311BHS, but most of the time I don't even know it is back there. I am confident you will have the same experience.

There is so many variables when dealing with pin weight. I own a 40 foot Montana Front Living Room with basically no storage forward of the wheels since the living had very little storage and the basement was only 30 inches wide. In the Montana the 3/4 of the kitchen was over the axles including the fridge and pantry while the bathroom and bedroom with the majority of the storage was aft of the wheels. Dry weights had it at 19% pin weight but full loaded it was down just above 17% because of where the storage was located. Yes, it towed terrible and push the SRW 1 ton in winds that was just plain dangerous but I was over 500 pounds under the trucks GVWR and the 5er weight in at just under 16,000 pounds.
Then I purchased a GD 310GK with the same truck and load to about 15,600 and I was over the GVWR of the truck and very close to the axle ratings. Look at the floor plan and most the storage was forward of the axles.
Floor plan can make or break the pencil weighting of RV for pin weights.Dennis & Ellie

You can save some pounds if you look into a 150 series, pin weights are a lot lower, might loose some room…..had a friend who switched to a 150 series 295 from a Reflection 303…..said it made all the difference, he had a ram 3500…..said he lost some storage but gain gross weight and mpg…just a thought…but real good assessment of your situation…..I did the same thing when I looked

I’m also in the ‘you’re good’ camp. Partly because you are actually aware of what you have and what the limits are.
I also wouldn’t sweat a couple hundred pounds in either direction if it came down to it.

Thanks everyone for the inputs. DW and I will now figure out what we want to do and when. Another factor I weighed was the 8 ft bed to get the additional leverage against getting pushed around.

You will be fine with the 28BH or the 311BH. We looked at both in 2018 and they were both well within the loading and towing limits of our Ram 3500 Laramie (normal leaf springs and not the optional air bag system). Fully loaded my 3500 and 28BH ride perfectly level with out using any airbags or other load support system. I had thought about getting Sumo Springs, but they are not needed at this point.
