The "Racetrack" system is a great system. With all three, or even just two units, they will output cool air out of every A/C outlet in the trailer, even with just one unit running. As you can see in the picture that you posted, the already cooled air from one unit's airflow cannot really enter one of the other units, but it can and will output cooled air at every outlet in the trailer. If you have the dump vents closed, it's like having all three or two units working together to cool the entire trailer.

I usually run just one AC, during the day I run the one in the bedroom and set the one in the living room just a bit warmer than the bedroom one so the unit that runs most of the time is the one in the area I am not sitting, at night we turn the living room one down to our preferred night time temperature so the living room runs at night, I find the noise of an AC very annoying (ear problems) so I like to keep the noise in the opposite end of the RV.

I find that if I run all 3 AC units I can hang meat in there it's so cold. The answer is no, you don't have to run them all at the same time. You run as many as you want at whatever temp you like until you find your comfort zone for what you're doing and where you're doing it.

I've ran all three at the same time, but it's not a common practice for me. When we were headed out west in 2021, our stay in the Texas and N.M area wee seeing daytime highs in the 105/106°F range. As soon as we got the trailer leveled and the slides opened, all three of them were turned on to cool it down as quickly as possible....but under "normal" circumstances (temps in the 80s and low 90s), we can get by most of the time on two at the most.
