The easiest way is to have a spotter watch and measure. Find a parking lot and use the parking lines as a reference. Park with the outside edge of the trailer along a line. Slowly pull out in a tight turn (like you would leaving a tight camping spot) away from the line. Have the spotter mark the location of the rear corner of the trailer as it swings past the line. This will give you an idea of the tail swing in normal situations.
The other way is worst case theory. Measure form the center of back wheel to the end of the trailer. If the trailer pivots on the rear wheel that will be the max tail swing. This can happen with a 5th wheel in the full jack knife position.

Yes, while lines on a paved parking lot make it easier to measure, this is tough on the suspension while doing u-turns. I avoid tight turns on pavement for this reason and much prefer to do so on dirt...less traction is less binding.
