Norcold 1210 not getting cold
As stated in the headline. Unit has been on AC for about 8 hours now. Fridge is about 60F, freezers are at 8F. I have 2 fans that I have used in the past installed to enhance heat dissipate in the back that have worked well in the past. Rig has been sitting for a few months now and has always been level. Today I thought I would run it for a little exercise before an upcoming month long trip. Now I am worried. Any thoughts?

Agreed.
Absorption fridges remove heat, they don't make cold.

Absorption and compressor type refrigeration systems REMOVE heat and don't make cold, it's just that compressor type systems do it much more efficiently. And the simple reason why is that a compressor forces continues movement of the refrigerant through the system and doesn't rely on convective movement of the refrigerant, like the absorption system does. The result is that absorption systems take a lot longer and require a fairly level format because the refrigerant is not force through it's cycle like a compressor system's refrigerant is.

Pretty much what everyone else said. Give it 24 hours. If after trust it is not cold, then start to worry.
