We stay in ours sometimes as long as 3 weeks at a time. Year round. (Trips, Holidays, Hunting etc.) Extreme cold and extreme hot climates. Usually four people and several dogs. Wanting to add extra insulation to help both in the cold and heat so stuff just doesn’t have to work as hard to maintain desired temp.

What do you do recommend? Will window covers create more condensation? (We use a dehumidifier, vents and fans). Additional insulation underneath? Skylight covers? Skirting that is reasonable for short trips? Tricks or tips to insulate slides?

What do you find works good?
 
Everything you stated will improve the temperature variations within your conditioned space.
Also, you may wish to add some

1 inch Circular Soffit Vent Stainless Steel Round Mesh Hole Louver Vent for Kitchen,Bathroom,Cabinet and Shoebox can be purchased from Amazon​

to the cabinet doors to aid with air flow.

Add rolled double faced foil insulation anywhere like under cabinet drawers under the bed frame and you can use the same material for window shades, do not seal the edges.

The biggest impact I found was under the spare tire, when the winch was installed the installers sliced the coreplast like a pie and did not seal it.
 
You could be my twin in camping except I avoid high temps...Being in Phoenix, I get plenty of that at home.
I recommend installing Polyisocronate insulation boards in the underbelly.It is light as a feather and waterproof, and will not retain water like the fiberglass insulation you probably have. I remove it while wearing a full face respirator and full body suit, to avoid getting the fibers in my eyes and lungs.

1" = R6.5. I install as many layers as will fit. Cut to fit, it can be wedged into place. For future maintnence, it can be removed. Cut the coroplast into sections of 6' or so, for the same reason. On my previous TT I added heat tape and insulation to the waterlines.
This is a big project. A creeper and concrete parking pad will be your best friends.
Once completed, you will love it.

I love nasty weather when on a hunt. I get to see the tailights of everyone heading home. When the weather breaks, the woods are empty of people, and the hunting is fantastic.
