We have a 2024 Grand Design imagine 2970. On the A/C, in order to get the rv temperature 70, you have to turn thermostat down to 60-64.

How are you measuring the temp in the RV? An independent thermometer or the indicator on the thermostat controller?
Make sure the AC vents are not blowing towards the thermostat.
Can you measure the temp of the air coming out of the vents? A meat thermometer works well for this.
 
I have a ‘22 3100RD which is not the same, but comparable. If you do not have the optional bedroom AC, it will be hard to hold 70 on a hot day. Also I assume your thermostat is in the hallway outside the bath. In my experience, this location can run cooler than the main living area if the nearby ceiling vent is pointed toward that area and potentially stop AC before the extremes are cooled. Just a thought.
