I can really appreciate the skill it takes to make one of those!
But if you can't play at all, how do you know if you did a good job acoustically?

As long as all the standard measurements are used for the specific model made you will have a nice sounding instrument. That is if the craftsmanship is up to par. The instruments sounds will change over time as the instrument ages as well as some other tuning aspects. Also when it is played by the violinist who is interested in it you can change the sound post position slightly or sometimes even have to make a new (bridge) to change the sound.
