Bypass hot water tank while winterizing?

Yes. No sense filling it up with gallons of antifreeze. On my older 2670, if you open the heater pressure relief and the low point drains underneath, it will drain itself completely, so you don't have to deal with taking out the plug. Then bypass after it is empty, before pumping in the antifreeze.
Just did that an hour ago as I winterized mine. It took just 2 gal for the whole thing, but I did have to crack a 3rd jug to get some into the drains.

Typically we use 2 gallons of RV freeze in our bath/kitchen/shower hot/cold appliances too. However, never pour any extra in traps due to running each appliance till pink shows which ends up in traps anyways.

Note: We keep our RV freeze in a 5 gal bucket w/lid and supply hose. Always store it in front storage and add 2 gals each year to top it off.
