I had to decide from four cooking methods what to take on my past trip. I decided on the 17" Blackstone. I used this for breakfast and burgers and added the grill grates from my smoker for steaks. It took about 15 minutes to heat up and I then put two ribeye steaks on them for five minutes and I then flipped them. I had to flip them four times, but they turned out fantastic. The grill grates fit perfect and I only use two of them. My wife had room in the front of them to saute some mushrooms.

I may have to try those. When I am buying steaks for the griddle, I tend to buy them thinner. Salt and pepper well and then butter and crushed garlic marinate as they cook in butter. Cook to 130 and then rest for 10 minutes!

Good grates make for easy cleanup too.

My steaks were about an inch thick. They were tender enough to cut with a fork. My wife puts some Kosher salt on them a few hours before grilling them.

And I must be the fussy steak eater. If I'm going to pay big bucks for steaks I sous-vide them first with a bit of liquid smoke to medium rare then hot grill for a minute or less. To try next: 3" thick ribeye or a tri-tip for both of us.
