My Daughter got me the cookbook for my birthday, we have been trying recipes in the book with our Green Mountain Grill, Davy Crocket. The cookbook also has salads and desserts - we tried the green bean salad, very simple easy, and it was top notch, here it is.
1lb green beans - trimmed - halved
3 Tbsp olive oil
1 Tbsp red wine vinegar
1.5 tsp dijon mustard
4 slices of bacon - cooked and crumbled to bits
1/2 pint cherry tomatoes halved
kosher or fine sea salt and fresh ground pepper to taste
Cook the green beans in boiling salted water about 4 minutes, then chill in ice water.
Whisk the dressing, add the green beans, add the tomatoes and bacon bits, toss - done!
