The 295RL's dont have a light (or fan) over the island either. So.... what we did was route a 12/2 wire up from the hutch mounted AC circuit nearest the front door side and place a new AC outlet above the dead wall space over the hutch.
From there, used white rectangular closed wire conduit from near the new outlet up the wall to ceiling and over to a new remote controlled 6 spd 22" fan/light combo mounted permenantly to the ceiling. Parts list follows:

12/2 w grd wire, various mounting screws, 2 black duplex outlets, 1 white duplex outlet, 3 - old work single gang outlet boxes, 2 black face plates (match hutch OEM), and 1 white face plate.
Note: The hutch crown molding hides the new above hutch wall mounted outlet from view. We also added some remote I/O color changeable above hutch accent lighting with the available power outlet.

The DW and I really like the new remote light/fan setup when cooking and/or washing dishes. The brightness and extra air movement helps when working in the kitchen. Not to mention the accent lights above the hutch which adds some indirect lighting and accent color at night. Also replaces a island surface top circulation fan for air movement within the trailer. The ceiling fan really helps with temperature control throughout the main area of the trailer too. We opted for the smaller 22" fan/light so that it would never come into contact with the retracted dining/kitchen slides during travel. Very happy with results!
