Would like some insight on the Anderson ultimate gooseneck hitch system for use with my GD 150 series 5th wheel.

Better combination than a fixed, rail mounted hitch?

I like the idea of a hitch that doesn't allow chucking.

This probably depends to a large extent on your tow vehicle. You would have to lock out the swivel action of the turning point hitch on your Reflection 150, to use one of the Andersen cup & ball hitches.

I'm using a 2018 GMC Sierra 2500HD 4x4 Denali (just bought it a month ago).

From your advice, I'm assuming it is pretty simple to lock out the swivel action on the turning point arm.
 
People either love or hate the Andersen hitch. Usually, the haters have never tried one. I can't imagine ever towing with anything else. Even on my 6.75' short bed, I have lots of cab clearance. Other than what Rob has pointed out, above, the only glitch I've run in to is my new truck is taller than the old one so I've had to reverse the kingpin adapter to get enough bed clearance. This works fine except the clearance is minimal if the tailgate should come open. I'm in the process of lowering the back of my truck so I can put the adapter back in the forward position.
 
Bed rail clearance was my concern, too. My Sierra came with a Z71 lift, which makes the truck sit higher than the typical 2500, by about 2 inches. That factory installed lift gives me pause to wonder if the Anderson will allow enough clearance. I'm assuming that once the weight of the rig is lowered onto the hitch, the clearance will level out and allow for ease of travel.
 
Do the GM's have blocks between the rear springs and axle that can be changed for shorter ones? The axle blocks on my F350 are 3.5 inches and I think I have 2 inch blocks that will fit.

My 2016 has no blocks. What is the bed rail height empty with z71?

Love Andersen with BW turnover. I have about 6" clearance to bed +_. Still tweaking it.
 
Please verify bed and rail height vs. Trailer level height since you have z71. I am not familiar with 150 series. If you want my bedrrail height empty let me know. Every rig is different!

The turning point hitch comes locked from the factory in the stationary position so won't have to do a thing
