It's actually the same as most all RD 5th wheel layouts. Great for watching tv for two people. Those sitting on the sofas will need some Ibuprofen for their stiff necks.
The cool thing about that TT is you have access to the fridge toilet and dinette with the slides in.

You will be within the specs of the 1500, but after towing it, you will buy a 2500.
Not enough body in the 1500 for the tail. It's going to toss that truck around.
I currently tow a bullet premier 26rbpr it’s around
755 hitch & 6180 dry with virtually the same truck.
Not a single issue
This camper is a few feet longer is my only worry ( catching wind )

We have the 2970RL and absolutely love it! Of course. We looked at the 3100RD and did not care for the kitchen location/layout. And we didn't need two couch's. We wanted a couple's coach and did not need to have anyone sleeping over.
The island in our 2970 is perfect. I can help with meal prep without being 'in' the kitchen. I mean in my DWs way.
Honestly we don’t “need” all those couches either I just though it was sort of a unique layout
