Should the dealer have given me this?

It's a cost sheet from about 6 price changes ago.

For a 2021 model? I thought they bumped the prices about once a year?

Yeah I questioned that as well but it doesn’t really matter anyway

Nope. This model year (2021) has had at least 10 to 12 changes. Keep in mind, 2021's have been built since last April. There have been 7 changes since October.

I agree, it's a seller's market right now. I jokingly asked the finance gal at the dealer what she made off me. She said they typically make perhaps $3500 or so on a typical sale, and they made $1400 off me. I ... umm ... don't believe her :). It's fine, I know I could have waited, I only got this trailer for about 15% off MSRP, in a year I'd do better. But I can afford it, and we sold our last trailer in September for just a few grand less than we bought it for brand new in 2016. So in the end it's probably a wash. Oh well.
