Water heater on gas...

Initial outing, so, do I start the gas AND electric to initially heat water, and do I fill the water tank before setting out on my trip, or wait till the campsite?

You can do either gas or electric or both - whatever works for you. Typically, we use electric if at hookups (gas if boondocking), but, if we're showering back to back, we turn the other source on also after the first shower. We've always traveled with the fresh water tank 1/3 full (you never know if you'll wind up on the side of the road overnight.

If this is the first time since it was winterized, make sure the water heater had water in it before turning on the water heater to avoid damaging the heating element. We mainly use electric unless dry camping, then propane. If multiple showers are planned then we will put gas and electric on.

Personal choice but we use electric only if electric is available at the site. We do not turn on our water heater until we arrive at the campsite and have hooked up water or have a full water tank. If on city water I wait a few minutes to ensure the water heater is full and then I run the hot water faucet to verify water. If using the fresh water tank, I turn on the pump, wait for the water heater to fill and check the faucet before turning on the water heater.

We usually fill our FW tank about one third before we leave the house to ensure I have water en-route if needed, even if the campsite has water.
 
We also don't travel with the hw on so when we arrive at a site with hookups and need hw then I'll turn both on to get hot water quicker. We then flip to electric only. It doesn't take long for the water to get hot though. Haven't time it. We also travel with 1/3 fresh water all the time. For those pit stops and just in case we don't get a spot at a camp site.
